Yum yum....
This dish is super delicious and very easy to make.And guess it is really a very very cheap dish ( except for the good olive oil).
We all say after eating this dish there is this really good after taste in your mouth.
In Rome the name of the Spahetti dish is pronouced as "Spagehtti ayo-e-oyo" or just "ayo-e-oyo".
Well i gather it is called with this name bacause of the chillies in it.
Last summer we went to Egypt for holiday.
And my daughter ordered this dish in a Restraunt in Luxor called Jamboree.
Must admitt i was so surprised how good it tasted with such a few ingridients.
So when we were back home i took my Italian cooking book and there it was this delicious dish under my nose................. I had this book for few years and I never tried the recipie thinking it is too simple !!!!!!!!!!!
Onion,garlic......
Frying which just take few minutes...
Sipmple and DELICIOUS
One onion finley chopped
4 garlic cloves crushed4 to 5 dry chillies sliced ( more if you like it spicy)
a hand full of parsley ( optional)
100 gm grated parmesan cheese.
Salt.
Chillie flakes to sprinkle over the dish.
Cook the pasta according to the packet.In the mean time heat the oil in a pan and add the onions, chillies and garlic.
Fry till they are soft.
Now drain the cooked pasta and add to the pan with the fried mix. Toss it very good and serve immiedietly .
Sprinkle the dish with the cheese and chillie flakes.
Enjoy.I told you it is a realy easy dish to make.
Tip: As the olive oil is a main ingridient, it is better to use a good quality of olive oil.

Aglio means Garlic in Italian and Olio is Oil.
A lot of people in Southern Italy like the Calabria region as well as Sicily cook with a lot of chilis or what is called peperoncino - usually a dried or most times pickled chili. So the chilis in this version just add a little kcik but it can also be made without the chilis.
Looks lovely .... And to be honest I had to practice pronouncing the name for a couple of times :D
I love this too.. it may be simple but really tasty.

I wanted to leave a small note on this dish and see that Leftover queen has already given a nice brief:) I make this without the onion and with fresh red chillies (pepperoncini) and sometimes also add mushrooms. It's delicious. Oh yes try adding plenty of finely chopped Parsley at the end... it gives a very earthy feel to the dish.

To be honest the recipe i've is without onions, but you know one should always make something according to ones own taste.
I do sprinkle parsley in the end on each plate except on my daughters.
Padma it is chillie, but if you want you can add less or more according to your taste.

Oh...how many times I've had a recipe for something good and didn't even know it for the longest time. This dish looks amazing though, and your pictures show just how good this dish must taste even with so few ingredients!

Hey - sometimes simple is best. I get exhausted by some of our labour intensive indian dishes. Time to eat is the same whether you take 20 minutes or whole morning to make.

Passionate baker, i think we have the same pasta bible book. This recipe comes from that book, just that i changed the recipe to my taste like adding onions and cheese. And where there is chocolate i am there. It is like a mouse smelling cheese :-)))))

I love Aglio Olio. I make mine with pickled jalapeno peppers. Otherwise it is the same. Love it!!!
