The weather is getting colder here so I have started making soups again.
I made this Onion soup which is really very easy and simple.
I know it is not the real French onion soup with wine and beef broth ( it seems if you add beef broth it gives really this dark colour, but i stick to the vegetable broth).
I also didn't do the toast with cheese, as i made the soup for everyday use than special occasion.

Hot bowl of soup
Ingridients.4 big onions thinly sliced.
1 garlic finley Chopped.
One and a Half ( 1500 ml) vegetable broth. I used broth tablets.
Pepper powder to taste
1 tbsp flour.2 to 3 tbsp oil/butter
Method:
Heat the oil in a pan and add the onions, fry them till really brown (not burned)?
I fry them in slow fire; so the onions don't burn.
When the onions are brown and soft add the garlic and fry for few seconds.
Now add the flour stir very nice ( i use the flour just to make the soup a little thinck).
Add the vegetable stock and the pepper powder stir well and cook for 10 minutes.
If you want you cab serve the soup with toasted bread with melted cheese on it.
Soup with Onions....never tasted this...Looks great

ReplyDeleteAsha i checked your post with onion soup. It looks delicious. You also used scallions, i didn't as they are so expensive now.
You can expect more soup from me as the weather is getting cold F :-)

ReplyDeletekribha, my hubby also isa soup guy, he likes to have soup everyday before his meal so i do make soup a lot. But then i make them and keep it in the fridge or frezze it.

ReplyDeleteThanks for this great recipe! I tried it and it turned out wonderfully, the only thing my husband didn't like was that the soup tasted a little sour. I only had chicken stock, so used that for the broth, and think I recall finding the same thing when using it in other recipes. Without adding a lot of sugar, do you know of any way to offset the sour taste of chicken broth? Thanks again!

ReplyDeleteAre you sure youare using a good chicken stock normally my soup never taste sour.
Try changing the brand of stock you use.
I make soup almost every alternative days and I have never had that the chicken stock is tasting sour.
YUM! I am currently snowed in, which not a great deal in the cupboards. I Had the ingredients for this soup though and it was delicious! So glad I found your blog! =)
