Asparagus Soup

I (we) had a wonderful time with my sister, weeks just flew while she was here. Eating, gossiping, sightseeing, shopping etc....did i say gossiping :-) actually it wa not gossiping, it was catching up with all the stories which happened to family back at home.

One would have thought after a month of all these one is fully relaxed and ready to blog, but then my daughters final exams starts in the middle of june.......so have to keep a eye on her.

While I was away I received few awards to my delight.Got a yummy Blog award from Ranji of Ranjis Kitchen Corner
Recieved the same award from Meera too of Enjoy Indian Food
Added later: Pravs of Simply Spicy gave ma also a yummy Bolg award, which I missed to mention when i wrote the post. Thankyou Pravs
Thankyou girls for this lovely award.
I have been also tagged by Divya of Easy Cooking for a Meme, which i will do in due tim :-))) Meme's are so difficult to write as I have no clue how to answer some of these ?

Also got this wonderful You make my award from Easy Crafts of Simple Indian Food-An Easy Cooking Blog Actually I should giver her this award as i always go and check her place to see what delicious food she has made.

Now lets go to the delicious soup I made :-))
The season of Aparagus is here and now at the moment they are the best, so I made this delicious soup. Here we love this soup as I only make them in this season when they are at their best and also price is low.

Mixing butter and flour

Almost done

Ingridients.
1 bunch of Asparagus
40 gm butter
40 gm flour
2 litre vegetable broth
250 ml cream
Peper and salt to taste
Parsley for garnishing.

Method:
Peel the asparagus and wash them can cut them into small chunks.
Keep the tips seperate as you can add them in the last minute.

Heat a large pan, add the butter and flour and stir for 1 or 2 minute and then add the vegetable broth a little by little and stir continusly so that no lump is there.

Add the asparagus, salt and peper and cook for 10 minutes till they are soft.Blend the soup in a mixer ( I used a hand mixer).
Pour it back into the pan and add the tips of the asparagus cook for futher few minutes and then add the cream.
Stir weel and serve garnished with the parsley.

I am sending this to Martha of An Italian in US for her event Fresh Produce of the Month. She have choosen Asparagus.
