You just dump all the ingridients in a big bowl , give it a good mix , pour it to the cake tin and , there is a delicious cake ater a hour or so.
I love the frosting also and i was in a palyfull mood so i just added a bit food colour to the frosting.
This is a recipe from one of my favourite cake book.
It is full of easy cake and dessert recipes. It is a Australian Women's Weekley Cookbook called Sweet Old-fashoined Favourites.
I have made a lot of recipes from theis book and each time it was real good.
Ingridients:
1 1/2 cup plain flour1 cup Sugar
1/2 tsp ground cinamon
1/2 tsp bicarboante of soda
3 eggs lightly beaten
3/4 cup oil
3/4 cup chopped peacan
1/2 cup undrained crushes pineapple in heavy syrup. ( I have never seen this here in the shops, so i just use tin pineapples and just slice them in small pieces)
2 cups mashed overripe bananas.
Cream chesse frosting:
60 gm Ceam cheese
30 gm butter
1 tsp vanilla essence
1 1/2 cup icing sugar
Food colour of your choice ( optional)
Lightly greas 23 cm slab pan, line base wiyh grease paper. I used a 20cm round tin
Sift flour sugar, cinamon, baking soda into a large bowl. Stir in eggs , oil, nuts, banana and pineapple, stir intill just combined.
Pour the mixture into the prepared cake tin, bakein moderate oven about 1 hour.
Stand the cake 10 minutes before turning onto wire rack to cool.
Spread the cold cake with the cream cheese frosting.
Cream Cheese frosting:
Beat everything in a bowl, with electric mixer untill light and fluffy.
