I have seen so much cookies flying around in the blogsphere, that it is not possible to catch up with all of them, thanks to Susans Event , I know one place for cookies if I want to make soe.
And indeed there is a variety of cookies there. I have stopped bookmarking cookies, when i see a new cookies which i like to make, I tell to myself, don't bookmark, it will anyway end up in susuans place so just go here.
These cookies are really yummy and you can make them with any jam and any kind of nuts you like.
I had dough left so I made some other cookie with them, which i will post next time.
When I made this my daughter was having her exams and I was so thrilled that they were looking si delicious i called my daughter and asked if she wanted to try and she was like yeah. So she took one and went back to her room for for continuing learning and then after few minutes i saw someones head peeiping from the door asking if she can have a another one, so i knew it had to be yummy delicious.
Ingridients:
125 gm cold butter
100 gm sugar
1 egg
pinch of salt
250 gm flour
40gm pine nuts
40 gm walnuts
100 gm raspberry jam
5 tbsp mil
100 gm bitter chocolate
Preheat the oven 180°c.
Make a crumbly dough with the butter, flour, egg and the salt. You might think it will never get to a ball shape, but continue till they form a dough and keep it in the fridge for atlest 2 hours.
Roast the nuts in a pan and chop them to small piece , mix it with the jam.
Take the dough from the fridge , roll them and cut squares of 8x8 cm.
Add in each squares 1 to 1 1/2 tbsp of the jam mixture , with a brush wet the dised of the squares with milk and close them so you get a triangle shape.
Bake for 15 minutes.
Let it cool.
In the mean time melt the chocolate and drizzele over the cooled cookies.
Enjoy them with a cup of Coffee/Tea.
