Salmon in curry sauce

The feast of the seven fishes is a tradition that Italians follow every Christmas Eve. "La Vigilia" or "the vigil" is kept with the custom of dining on 7 fish dishes as we await the birth of the savior at midnight.
I didn't know about this Italian tradition, only knew when i read in Maryann's place.

When I prepare fish it is mostly on a weekend. Maybe it is because theer is cream in the sauce and I think for a weekday it is too heavy.
I don't think I have a actuall recipe for this I make the sauce just like that adjust according to my liking.



Ingridients.
Salmon
Mushrooms 250 gm I used a variety or mushrooms
Cream 150 ml
2 to 3 tbsp flour
3 tbsp butter
Fish/Chicken broth 300 ml or more if you want a thinner sauce
Curry powder 2 tsp or according to your taste.
1 garlic finley chopped
Peper and salt to taste.
Parsley to serve

For making the sauce, heat the butter in a pan and add the flour and let them fet for 1 to 2 minutes so that the raw flour taste is gone. Add the broth and stirr well and bring it to boil , add the curry powder and garlic to it and let the whole sauce cook for 15 minutes in a very low fire.
If you like you can strain the sauc in a sieve so that there is no gaelic pieces in them and also no lumps in the sauce.

In the mean time cook the fish. You can fry them, steam them, the choice is yours.
Also in a seperate pan add a knob of butter and fry the mushroom and keep them warm.
When the sauce is cooked for 15 minutes add the cream to it , stir and the sauce is ready to serve.
I plate them like you have seen in the piciture.

I didn t know about this Italian tradition either. This dish looks yummy I love salmon although I don t eat it that often.

I usually make a sweet and tangy sauce for the Salmon when I bake or grill them. This recipe is simple and looks very delicious.

Love salmon in any form... I do try to stay away from cream sauce at home, I make a similar version with coconut milk instead of cream.
